Rosemary Lemonette

This is a healthy alternative to vinaigrette, made with freshly squeezed lemon and immunoprotective, mood-enhancing and brain stimulating rosemary leaves. Of course, the more organic ingredients you can use the better so that your body has less  detoxing to do from non-food chemicals. You’ll need a good blender and these ingredients:

1 cup cold pressed virgin olive oil
2-3 tablespoons of freshly squeezed lemon juice
1 tablespoon soy sauce, ideally tamari or shoyu
I small piece of garlic
2 teaspoons of flax seeds
1/2 cup filtered water
The leaves from a 3cm twig of rosemary
Optional: 1/4 teaspoon ground cayenne pepper

The method is simple, 

1) Put everything except the water in your blender and blitz until smooth.
 
Don’t worry if you don’t have any flax seeds. They are there to thicken the dressing a little so that it stays emulsified and doesn’t separate out into oil and water, but if you don’t have it you can just shake your dressing before you pour it over your sprouts and other salad.

2) Once the mix is smooth, add the water and blend again briefly. 

3) Add further seasoning and/or water to taste and enjoy. The dressing keeps well in the fridge.
