WARM GREEN LENTIL & ONION SALAD
An unbelievably tasty, easy and nutritious dish with just a handful of ingredients:
Preparation time 15 minutes
Cooking time 30 minutes
4 large onions cut into 1cm rings
4 tbs olive oil
1 tsp brown sugar
200g green lentils, rinsed
240g sunblush tomatoes in oil loosely drained
zest of 1 lemon plus 2 tbs lemon juice
1/2 tsp cumin
50g flat leaf parsley chopped
Fry the onions with a pinch of salt over a low/medium heat turning regularly for 25 minutes until soft and golden.
Add the sugar and cumin.
Meanwhile place lentils in a saucepan with 550ml water, bring to the boil then simmer for 25minutes until tender.
Mix the onions with the lentil, tomatoes, parsley and lemon juice & zest. Serve warm either on it's own or with warm crusty bread.
